Caribbean curry meal kit

Our caribbean curry meal kit is a great all-round favourite. Tasty and filling, it’s perfect for a night in or a quick lunch on the go. our authentic recipe combines easy cook long grain rice with red kidney beans, coconut milk and spices, with a dried herb & coconut mix and a caribbean-style medium heat curry sauce.

1 x Rice & Peas microwave pouch
1 x Herb & Coconut Mix sachet
1 x Curry Sauce sachet

Just add

350g Chicken Fillets, diced
Tinned Potatoes
150g Tinned Baby Potatoes, cut into halves

Make your Caribbean curry vegan-friendly by using freshly diced vegetables or soy pieces instead of chicken.
Cooking instructions

Add 2 tablespoons of oil to a large pan. Heat the oil and add the diced chicken. Cook for 3-5 minutes until lightly golden.

Add the potato pieces and Caribbean Curry Sauce to the pan. Stir gently together over a medium heat for 15 minutes. If required, you can add 50ml of water to the pan to achieve the desired sauce consistency.

Tear or cut open the Herbs & Coconut Mix sachet and empty the contents into the pan. Stir well and cook together over a medium heat for a further 10 minutes until the chicken is fully cooked.

Microwave the Rice & Peas pouch for: 750w for 2 minutes / 850w for 1.5 minutes. Remove and tear open to allow steam to escape. Leave for 1 minute.

Empty the Rice & Peas pouch onto a plate and fluff up with a fork before serving alongside your Caribbean curry.
